Baking is the part of cooking where you cannot taste as you go. Once the dough is in the oven the decisions are already made, so almost everything worth knowing sits upstream of the heat: what the flour is, how much water it took, what raised it, and how long it was left alone. This section is organised that way — the ingredients first, then the method families that combine them, then the hardware, then the wider world of bread, and finally the Ohio and cottage-food thread that runs through the site's food pages.

The Ingredients

Six things do nearly all the work: flour, water, salt, a leavening agent, fat, and sugar. Everything else is flavour or insurance.

Flour and grain

Protein content is what separates a chewy baguette from a tender cake, and it is set long before the sack reaches the shop — by the wheat class, the growing season, and the mill. flour carries the full table of types and their protein bands; gluten explains what that protein actually does once water hits it.

Water, salt, and ratio

Hydration and salt are the two numbers a baker changes first, and they are the two most recipes report worst — buried in cups rather than stated as a percentage of flour weight. baker's percentages is the page that fixes that, and it is worth reading before any of the method pages below.

Leavening

Three ways to put gas into a dough: a live culture, commercial yeast, or a chemical reaction between an acid and a base. Which one you pick determines the timescale of the whole bake — hours for yeast, days for a starter, minutes for baking powder.

Fat, sugar, egg, and dairy

Fat shortens gluten strands and makes crumb tender; sugar holds water, browns, and feeds yeast; eggs bind and enrich. These are the levers that turn a lean bread dough into brioche, and a biscuit into a cookie.

Bread

Bread is not one method but five or six, and the differences are mostly about what raises the dough and what it is baked in. bread is the landing page; the pages below split it by method.

Sweet Baking and Pastry

The sweet side splits by how the fat is handled. Creamed into sugar gives cake; cut into flour cold gives pastry; folded in sheets gives lamination; left out entirely gives most no-bake work.

  • cookies — the shortest feedback loop in baking, and the usual first cottage-food product; the worked recipe is chocolate chip cookies. Equipment and Heat

Most baking failures are heat failures — a domestic oven that runs cold, a thermostat that swings forty degrees, or a pan that conducts nothing. Two pages cover the hardware:

Growing and Milling Your Own

The site's grain pages are on the growing side rather than here, because the interesting decisions are agronomic. milling your own flour is the hinge between the two: whole berries keep for decades, milled flour keeps for months, so anyone storing grain seriously stores berries and mills to order.
